Nah, just whatever gets the job done and doesn't cost an arm and a leg. MDF is sacrificial. For the best cuts, you'll actually have your mill go down a few thousandths of an inch into it. For fixturing up and holding down metal parts, an aluminum T-slot table is nice to have, but screwing metal down to a sheet of MDF also works fine.
Beyond that, if you're doing something more specialized, you'll probably be looking at creating your own fixturing for specific jobs. When I was running CNC years back, much of our fixturing was to throw some scrap MDF on the table, run a drilling program, screw through the drilled holes, then run a cutting program to finish up the fixturing. Pretty basic stuff.
